a lot of apples
There are some apples. 「apples」は複数ですので、「There are」と言えます。
There are a lot of apples. この「a lot 」は「たくさん」という意味。「a lot of apples」は直訳で「リンゴのたくさん」となります。その「たくさん」は一つのかたまりと考えられ、「a lot of apples」は文法的に単数とされる場合があります。なので、There is a lot of apples.とも言えるのです。「a lot of」の「a」でわかります。下記の例を比べて下さい。
There is a bowl of apples.
（複数の）リンゴの（単数の）ボールがあります。
a piece/slice/glass of
paper, bread, waterなどは数えられない名詞。 数える場合、
a piece of____ （１枚、1個の＿＿＿）
a slice of ____ （１スライスの＿＿＿）
a glass of ____（１グラスの＿＿＿）
例えば
How much paper is there?
どれぐらい紙がある？しかし、paper.....
How many pieces of paper are there?
紙が何枚ありますか？
moneyとdollars
moneyは「お金」ですが、「money」は数えられない名詞です。お金を数える場合は「dollars」：10 dollars, 100 dollarsなど、dollars （紙のお金やコイン)は数えられるが、「money」お金は数えられません。下の例文を見てみましょう。
dollars => How many dollars?
money => How much money?
「How many dollars?」は普段の会話であまり使いません。お金の場合は：
How much money do you have? => I have 100 dollars.
How much pizza?
How much pizza?
ピザどれぐらい？
How many pizzas?
How many pizzas?
丸ごとのピザ何枚？
How many slices of pizza?
How many slices of pizza?
ピザのスライス何枚？
